This light salad is ideal when you want something tasty in between. It can be easily filled into 
a glass and you can take it with you. Tastes great cold or lukewarm. The spring can come

Red quinoa with celery apple salad and tahini dressing

Ingredients for 2 servings
 100g red quinoa
250ml of water
about 5-6 sticks of celery
 1large apple
Tahini Dressing:
 3tablespoons tahini
 1tbsp lemon juice
 3tablespoons water
 1tbsp soy sauce
 1tbsp sesame oil
 1tbsp agave syrup
some salt & pepper


Bring the water for the quinoa to a boil in a small saucepan. Rinse the quinoa in a fine-mesh sieve with cold water and add to the boiling water. Reduce the heat and simmer on a low flame for about 20 minutes. Stir from time to time.
For the dressing, mix all the ingredients in a small bowl until you get a homogeneous mass. Finely slice the celery sticks with a knife. You can also use some of the green, it gives a good colour. Core, quarter and thinly slice the apples. Place the apple and celery in a bowl and mix with the dressing.
Drain the quinoa and place in a bowl with the celery-apple salad and enjoy while still warm.
